Keto Chicken Strips, Low-carb & Gluten Free


  • 2 lbs chicken strips
  • ½ cup Mayonnaise
  • ¼ cup pickle juice
  • 2 eggs
  • ½ cup coconut flour
  • 1 cup almond flour
  • ½ cup flax meal
  • Seasonings of choice


  • In one bowl mix mayonnaise, pickle juice, and egg.
  • In a second bowl mix together coconut flour, almond flour, and flax meal. I also added a couple of teaspoons of garlic powder and some Lawry’s Total Seasoning.
  • Cut chicken tenders into strips. Dip into egg mixture then roll in dry ingredients.
  • Fry in very hot avocado or algae oil. I don’t recommend olive oil with this high of heat because of its lower smoke point.
