Broccoli Salad, Keto and Low-Carb


  • 8 Cups broccoli chopped
  • 8 ounces cheddar cheese cubed or shredded
  • 1/4 cup red onion diced
  • 1/4 cup sliced almonds or chopped pecans
  • 8 slices of bacon cooked and crumbled
  • 1/2 to 1 cup mayonnaise see video below
  • 1 to 2 tablespoons of apple cider or balsamic vinegar
  • 1 to 2 tablespoons of granulated sweetener we use Swerve


  • Add vinegar, sweetener, and mayonnaise to a bowl and whisk together. Set aside.
  • In a large bowl, combine broccoli, cheese, red onion, almonds or pecans, and bacon. Mix well.
  • Mix mayonnaise mixture and broccoli mixture together.
  • Refrigerate for an hour before serving.
