Super Easy Keto Waffles

Y’all!! When we say these keto waffles are super easy… we mean it! Plus, they are oh-so-scrumptious! Our families love both pancakes and waffles. And while we love our pancakes, that recipe is a bit more involved. And, let’s face it, Moms and Dads all over the planet need some go-to, delicious recipes that use all the basic keto staples we already have on hand! Am I right?

Which team are you on?

Team Pancake or Team Waffles?

Truth is, we like both. There are valid points as to why one is “better” than the other. These perspectives are widely debated, based on personal preferences, and are often comical. Trust us, we get it! However, we would like to remain neutral on the subject thus making room for both the pancake and the waffle and here’s why…

Reason 1: We have come to terms with cleaning the waffle iron.

Reason 2: Most importantly, they are BOTH serving mechanisms for syrup and butter!!

The latter statement is what links our love together for these two stackable, hot off the iron/griddle, delectable platforms for syrup and butter. Ha!

Can this batter make pancakes?

Our answer is a unanimous NO. We have tried this batter like a pancake and they turned out super flat and unappealing. While we were a tiny bit disappointed that this recipe isn’t versatile… we resolved to the fact that this batter makes AMAZING waffles. So, it’s all good!

The Waffles

As we said, we need as many super-quick and easy recipes as we can get! We have tried lots of pancakes and waffles recipes out there. And, sadly, most fell short of meeting our expectations so we set out to create our own. Now, we fully realize we’ll never achieve the “same” result using almond flour in place of wheat flour; but these are THE BEST almond flour waffles we have tasted. The taste and texture are perfect. We absolutely LOVE them!

They can be enjoyed by almost everyone! (not nut-free)

This waffle recipe contains no wheat, no grains, no complicated ingredients, and nothing artificial. They are gluten-free since they are made with almond flour.

Multi-Purpose Waffles

We often make a double batch and freeze any leftovers for quick on-the-go breakfasts or snacks. Another meal our kids love is good ol’ waffle PB&J. Our kids love PB with strawberry Jam. These waffles really make a great PB&J. They also make amazing sandwiches! The slight sweetness in the waffle pairs so well with salty savory meats and creamy cheeses… think grilled ham and cheese waffles! Oh, yeah!

If not, then a quick trip to your local grocery store for some basic staples is in order. Go ahead and get your kitchen ready to pump out some yummy goodness. A small investment at the beginning of your journey will help you be successful in living this lifestyle. Now, go make some waffles!

Ingredients

  • 6 eggs
  • 4 oz of cream cheese, softened
  • 1 cup plus 2 Tablespoons of almond flour
  • 3 Tablespoons of butter, melted 
  • 2 teaspoons of baking powder
  • 1 to 2 Tablespoons of golden monk fruit
  • 3 Tablespoons of heavy whipping cream
  • 1 teaspoon of vanilla or maple extract

Instructions

Pre-heat waffle maker. For this recipe, we like to use a full-size waffle maker.

Combine all ingredients in a bowl and mix very well. You can use a whisk, handheld mixer, or blender.

Place enough of the waffle mixture into the warm waffle maker to make one waffle. We used 1/3 cup for each waffle.

Cook until golden.

Repeat until all the waffle batter has been used.

Our Super Easy Keto Waffles are great by themselves, or you can make them even better by adding butter and homemade maple syrup. (see tips)

Tips

Make extras and freeze. Keep them on hand for sandwiches, quick meals for the kids, or busy weekday mornings.

Change it up by adding cinnamon or different extracts. (Some extracts you could use would be vanilla, banana, red velvet, maple or cake batter flavor)

Leave out the sweetener and extracts, add savory herbs for a delicious alternative to bread.

Add some cream cheese and berries or whipped cream for a quick dessert.

Make some quick syrup by heating up 2 parts water to 1 part monk fruit till monk fruit has dissolved. Add butter and maple extract. Wisk in 1/8 teaspoon of xanthan gum to thicken, optional.
