Ingredients
- 2 cups berries of choice fresh or frozen
- 1 tablespoon lemon or lime juice
- 2 tablespoons chia seeds
- 1-3 tablespoons of monkfruit or sweetener of choice to taste (I love golden monkfruit)
- 1 tsp of extract (I use either vanilla or cake batter)
Instructions
Put your berries (I used frozen raspberries) in a saucepan over medium heat and add in lemon or lime juice. Cook while stirring until the berries break down, about 5 to 10 min.
Add in sweetener (to taste).
Mash or blend it.
Still wondering what makes this recipe the best? Take your chia seeds and grind up with a coffee grinder. Then, stir in ground chia seeds a little at a time until it is the desired consistency.
Add in extract.
Let stand until it thickens. You can add water if you like it a thinner consistency.
Allow it to cool to room temperature and store in an airtight container in the fridge for up to two weeks and in the freezer for up to three months.
It is great on some keto bread or to top some cheesecake, or pair with our Monte Cristo Roll Ups.
