Who doesn’t love a sweet and savory Monte Cristo? Have you thought you would not be able to enjoy one on the keto diet?
Well, we have got some great news for you. These Keto Monte Cristo Roll-Ups are everything you have been missing. Now you can enjoy them on a keto or low carb diet.

Although they can be made all year long, they would be perfect at your next holiday party or just a small dinner at home.
Ingredients:
Dough
- 2 cups of part skim mozzarella cheese
- 3 oz of cream cheese
- 1 1/2 cup of almond flour
- 2 TBS of powdered erythritol (we used Swerve)
- 3/4 TSP of orange or pineapple extract (optional)
- 2 eggs
- 1/4 tsp ginger
- 1 tsp active yeast for flavor (optional)
Filling
- 1/2 cup shredded Swiss cheese or 1/4 pound thin sliced
- 1/4 pound deli thin sliced ham
- 1/2 pound deli thin sliced turkey
Dijon Butter Topping
- 4 TBS butter
- 1 egg
- 1 TBS Dijon mustard
Instructions:
First, you will want to add the mozzarella cheese, cream cheese, and almond flour to a microwave safe bowl and mix together.

Microwave for 1 minute. Stir, then microwave for 30 more seconds
or until cheese is melted and can be easily mixed.
Add your egg, yeast, powdered erythritol (Swerve), and orange extract. Mix well. Don’t be afraid to use your hands to mix if you need to.
Once everything is mixed together and it is a nice dough. Place it between two pieces of parchment paper or the non-stick sides of freezer paper. (we used freezer paper)
Roll out till approximately 1/4 inch thick.

Next, layer your ham, turkey and shredded cheese on top of the rolled out dough.

Carefully, roll everything tightly into a jelly roll.

Keeping it wrapped in paper, place into the freezer and let chill for at least 30 minutes.
Once chilled, remove from freezer. Leaving the paper on Monte Cristo roll, slice into slices approximately 1 to 1/1/2 inch thick.

Remove the paper from each roll and place in a parchment lined pan.

Slightly melt your 4 tablespoons of butter, mix in egg and Dijon mustard. Spread over top of rolls.

Using some foil lightly cover Monte Cristo Roll-Ups. Bake at 350 degrees for 15 minutes. Remove foil and cook for another 15 min until slightly brown on top.
Remove from oven and let cool slightly. Serve with powdered Swerve dusted on top and a side of sugar-free jam for dipping.

These can be frozen pre-sliced and uncooked. When you are ready to cook them, remove them from wrapping and place in a pan. Cover with
