Finger foods are our downfall and corn dog muffins are no exception. So, we were on a mission to make a keto corn dog muffin. I think we nailed it.
We have tried a couple of different recipes. Both are delicious.
Corn Dog Muffin Recipe One

- 1 ½ cup almond flour
- 1/4 tsp salt
- tablespoon baking powder
- 2 eggs
- ⅓ cup sour cream
- 4 Tablespoon melted butter
- Little Smokies or hot dogs cut into fourths
Melt butter, add sour cream and eggs, whisk and add dry ingredients. Spoon into a mini muffin pan. Stick hot dog section into the center. Bake at 400 degrees until done.

- 2 Tablespoons of Coconut oil
- 1/2 tsp xantham gum
- 1 tsp Baking Powder
- 2 cups almond flour
- 1/8 cup of granulated sweetener (optional)
- Little Smokies or hot dogs cut into fourths
Melt butter and coconut oil together. In a separate bowl beat eggs for 2 to 3 min. Add butter mixture to eggs and mix well. Add remaining ingredients and mix well. Pour mixture into a mini muffin pan. Stick a piece of hot dog into the center of each muffin. Bake at 400 degrees till done.

Do you happen to have a breakdown of the macros & calories for these?

Can you indicate general cooking time for a certain number/ size of muffins?
I would say about 10-12 min. The smaller your muffins the less time. I would start checking around 8 min to be safe.
What can I substitute for Almond Flour?

How many does it make?
I really think you could get 16 to 24 out of this recipe. Maybe more depends on how much batter you put in each mini muffin.
Can I replace sour cream with cream cheese
We have no idea what cream cheese would do. We would say it is not going to have the same effect.
