- 2 lbs chicken strips
- ½ cup Mayonnaise (check out our video below on how to make your own, quick and easy)
- ¼ cup pickle juice
- 2 eggs
- ½ cup coconut flour
- 1 cup almond flour
- ½ cup flax meal
- Seasonings of choice
In one bowl mix mayonnaise, pickle juice, and egg.
In a second bowl mix together coconut flour, almond flour, and flax meal. I also added a couple of teaspoons of garlic powder and some Lawry’s Total Seasoning.
Cut chicken tenders into strips. Dip into egg mixture then roll in dry ingredients.
Fry in very hot avocado or algae oil. I don’t recommend olive oil with this high of heat because of its lower smoke point.
Great dipped in out keto sauce.

- 4 tablespoons mayonnaise
- 3 tablespoons of French’s chardonnay mustard
- 2 teaspoons of golden monk fruit
- 1/2 tsp Coconut Aminos
