Keto Big Mac Salad

The Big Mac Salad has been a staple of ours since we started the keto diet. There are many versions of it out there in recipe land. This is our version and our favorite. The “special sauce” is the clencher for us. It is delicious and captures the flavors reminiscent of those found at the golden arched fast food chain. Each bite is so satisfying you do not miss the overload of bread that comes with its namesake. You will not be disappointed with this one!

About the Beef


You have some choices here. If you are in a hurry you can simply place your ground beef in a skillet, season it and brown it up let it cool slightly and add it as a topping to your salad greens. We prefer to season our beef and form into individual quarter pound patties and brown the beef up into burgers. We then chop each burger up and top our salads with larger beefy bites. We feel that this gives each bite… well…more bite. If all you have are cheese slices, one option is to melt your cheese on your burger if you like. We do this sometimes as well as add cheese we already have shredded up in the fridge. Both are fine and totally up to you.

About the Greens and Toppings

We always have romaine lettuce on hand so this is our usual go-to. Although, we’re sure darker greens such as a spring mix would work just fine here, a m ore neutral lettuce will yield that all too familiar Big Mac taste. Neutral is better here. Roma tomatoes are also usually always in our homes. Organic vine ripened tomatoes are so flavorful! To avoid added carbs and starches we shred our own cheese and always have our favorites ready to go. A mild cheddar like Colby or Colby Jack work well here. The pickles must be hamburger dill slices. Not just because they are keto friendly but because they add that particular pickle flavor we are looking for in this flavor combination. The sesame seeds are totally optional but really do add that little extra something and are quite pretty.

The Special Sauce

The Big Mac wouldn’t be the same without this sauce. We love our version so, so much! The base of our sauce is a 50/50 of homemade mayo (you can use any sugar free mayo you like) and sour cream. Oh yeah, sour cream! Then we spruce it up with a couple unexpected add ins. We love the addition of the tiniest bit of allspice to this sauce. It adds a depth that isn’t overpowering and could be considered a secret ingredient. What takes this sauce over the top… is the onions! We decided to add some buttery sauteed onions to mimic those little onions you get at Micky D’s. The sweet caramelized onions and that butter… really punch up the flavor!!

Ingredients for the Salad:

  • 1 lb ground beef
  • Salad greens of your choice we used Romaine Lettuce
  • 1 small Roma tomato
  • Dill pickles (we used hamburger slices)
  • 1 cup Colby or Cheddar Cheese
  • Toasted Sesame seeds (optional)

Ingredients for the Special Sauce:

  • ½ cup Sugar Free Mayo (we make our own)
  • ½ cup Full Fat sour cream
  • 1 table spoon tomato paste
  • 2 teaspoons yellow Mustard
  • 2 tablespoon Pickle Juice
  • 2 tablespoons granulated Golden Monk fruit
  • ½ a medium white or yellow onion (sauteed in butter and finely minced)
  • 2 tablespoons unsalted butter
  • Pink salt to taste
  • Freshly cracked pepper to taste
  • A tiny pinch of allspice maybe 1/16 of a teaspoon (optional but recommended)

Instructions:

Wash and chop your veggies. The onion can be chopped and then minced after they have been sauteed.

To sauté the onion, chop it and add to a skillet with the butter. Sauté on medium heat until the onions are caramelized. Be sure not to cook on high heat because you don’t want to burn the butter. Remove from the skillet and mince the hot onions until fine but not mushy. Set aside to cool.

In a small bowl add in the rest of the sauce ingredients and whisk until thoroughly combined. Add in the cooled onions and mix well. Taste and add the amount of salt and pepper you prefer.

To toast the sesame seeds add them to a dry skillet over medium low heat. Toss them around until they begin to become fragrant and take on a toasty color. Remove immediately and pour onto a cool plate. Do not leave them in the skillet because they will continue to toast and might burn and that won’t be good. This is totally optional. It is super yummy though!

Plate your salad

To your salad bowl or plate add the lettuce. Top with the beef, tomatoes, pickles and cheese. Drizzle the special sauce over top and sprinkle the sesame seeds to garnish and dig in!!!
