Mexican wedding cookies, snowballs, Italian wedding cookies, butterballs. No matter what they are called, they are one of my favorite cookies.
Since starting the keto diet I had all but forgot about them, till now. I created this recipe by chance.

These cookies did not last long in our home.
This was a great lesson learned. Even your favorite recipes can be made keto friendly.
- 1/2 cup Walnuts or Pecans
- 1/4 cup raw pistachios
- 3/4 cup almond flour
- 1/4 cup ground flaxseed
- 1/4 cup of your favorite powdered sweetener (I used half Splenda Naturals and half golden
monkfruitthen I ran through a coffee grinder. You could use Swerve)
- 5 Tablespoons of melted butter
- Pinch of salt
Process all in a food processor until the consistency of wet sand.
Roll into 1 inch balls.
Roll the balls in powdered sweetener or cacao powder.
Chill for at least 1 hour. Then enjoy!!
