Ingredients
- 2 ounces unsweetened bakers chocolate, coarsely chopped
- 1 package cream cheese, softened
- 1 stick of butter, softened
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon pink salt
- 3/4 cup to 1 cup of powdered sweetener (we use golden monk fruit and powder it ourselves)
Instructions
Line an 8-inch square pan with parchment.
In the top of a double boiler set over simmering, not boiling, water, heat chocolate, stirring frequently, until melted. Remove from heat; cool slightly.

In a large mixing bowl, using an electric mixer set on medium speed, beat cream cheese and butter until smooth. Add vanilla and salt. Gradually add powdered sweetener, beating until smooth.
Add the melted chocolate to the cream cheese mixture, beating until combined. Spread mixture in prepared pan; smooth top. Chill until firm, about 1 hour.

To remove fudge from pan, lift up edges of parchment paper. Cut fudge into squares; store in refrigerator or freezer until ready to use.

Tips
Fudge can be wrapped tightly in plastic wrap and frozen up to 1 year. To thaw, let the unopened fudge stand at room temperature for 2 to 3 hours.
Heat chocolate in the microwave when time is short.
Add 2 teaspoons of peppermint extract at the same time vanilla is added for a touch of mint.
Double the recipe and freeze some to have on hand for when you have a craving.

- 1 cup butter, softened
- 1 cup Natural Peanut Butter (no sugar added)
- 1 tsp Vanilla Extract
- 1 cup powdered sweetener (we use golden monk fruit and grind it ourselves)
- 1/2 cup Unflavored Whey Protein or Almond Flour
Instructions
Line a 9×9 square pan with parchment paper.
In a large mixing bowl, using an electric mixer set on medium speed, beat cream cheese until smooth. Add vanilla and peanut butter beat till smooth. Gradually add powdered sweetener, beating until smooth.
Add in your remaining ingredients. Blend with an electric mixer until well combined.
Pour fudge into prepared pan and spread out evenly.
Chill in refrigerator until set and cut into squares.
