French Toast Breakfast Eggs (Keto and Low-Carb)

Absolutely delicious! These extremely easy French Toast Breakfast Eggs are the perfect keto breakfast. With an amazing texture and a great flavor, this makes a great meal anytime!

One morning, we were making french toast with some of our keto bread. We had some extra egg mixture that was leftover and didn’t want to throw it out. So, we had a bright idea to cook it. We were amazed at how good it tasted. Even our pickiest family members, who normally will not eat eggs, loved it and now request it often.

Quick and Easy

While we love our Protein Packed Pancakes or Waffles, sometimes we need something really quick but nutrient-dense. This hits the spot. Since this recipe is basically, just eggs, this meal is a great source of fat and protein without a lot of carbs.

Ingredients

  • 3 eggs
  • cinnamon to taste (1 teaspoon if you like it a light flavor and 1 tablespoon if you like the cinnamon flavor strong)
  • 1/2 teaspoon baking powder
  • 1 to 2 tablespoon powdered sweetener (we use golden monk fruit)
  • 1 Tablespoon of coconut flour (Optional. Adds a bit of bulk and a pancake-like texture. See tips)
  • Splash of heavy cream (if you need to thin out the egg mixture)
  • butter or ghee for cooking

Instructions

Combine all ingredients in a bowl and mix well.

If you prefer the texture to be more like a pancake you can add 1 tablespoon of coconut flour and a splash of heavy whipping cream.

Pour into a heated non-stick skillet. If you are using a large skillet you can pour all the egg mixture in. If you are using a small skillet, pour half the mixture in at a time to cook. If you are not using a non-stick skillet you can use a little butter or ghee to oil the pan. (Butter burns quickso we like to use ghee)

Cook until done. We usually like to flip the egg to cook both sides well.

Tips

Top with some sugarfree syrup. We used to use Lakanto but they have changed their recipe and now add potato starch. We now make our own. Heat 1 part granulated sweetener to 2 parts water (of course we use golden monk fruit). Add 2 to 4 tablespoons of butter and a pinch of xanthan gum. Simmering it a bit on the stovetop will make it slightly thicker but if you are in a rush heating it in the microwave will work.

You can also top with some homemade berry sauce. Simmer some berries until heated thoroughly and are easy to mash. Add powdered sweetener to taste.

For a really quick meal with very little carbs make it without the coconut flour. If you are in the mood for a more pancake texture add the coconut flour. It depends on our mood as to which one we make.
