Easy Cheesy Bacon Cauliflower Tots – Keto

We are always looking for meals and side dishes that are easy to make and do not take a lot of time. These cauliflower tots are an amazing substitution for tater tots. We love cooking dishes that don’t take a lot of time or energy. You guys, they come together so quickly and taste delicious. The kids absolutely love them and beg for more. These are always a hit anytime we serve them. This is a great side dish for busy moms.

cauliflower tots baked and cut into pieces

Ingredients

  • 1 medium cauliflower, grated
  • 6 to 8 strips bacon cut into small pieces and cooked
  • 1 cup shredded cheddar
  • 1/2 cup Parmesan Cheese (Shredded)
  • 1 cup shredded gouda or Monterey
  • 1 Tablespoon Butter softened
  • 2 Large Egg
  • 1/4 Teaspoon Onion Powder
  • 1/2 teaspoon garlic powder
  • Pink Himalayan Salt (To Taste)

Instructions

Put all ingredients into a bowl and stir till mixed together well.

Chill in the refrigerator for 10 min.

Take out and spread onto a parchment-lined half sheet pan.

Bake for 375 degrees for about 20 to 25 min. Just golden brown and crispy.
Pull out and cut into strips.

Tips

•These are really great paired with some of our homemade ranch dressing or sugar-free ketchup.

•For a really crispy tot, fry in a pan or in an air fryer.

•Great as an appetizer.

•If you are pressed for time, use the frozen cauliflower rice.

•These will freeze beautifully! Freeze them on a baking sheet for about 1 hour then transfer them to a freezer-safe bag. Bake from frozen.

•These go great will any meal. Serve them with our chicken nuggets, keto chili, chicken wings and legs, or corn dog muffins.

•Makes a great base for a pizza.
