Broccoli Salad, Keto and Low-Carb

Broccoli Salad is a quick summer recipe that everyone can enjoy. Quick and easy, perfect for a side dish or at a BBQ.

Ingredients

  • 8 Cups broccoli, chopped
  • 8 ounces cheddar cheese, cubed or shredded
  • 1/4 cup red onion, diced
  • 1/4 cup sliced almonds or chopped pecans
  • 8 slices of bacon, cooked and crumbled
  • 1/2 to 1 cup mayonnaise (see video below)
  • 1 to 2 tablespoons of apple cider or balsamic vinegar
  • 1 to 2 tablespoons of granulated sweetener (we use Swerve)

Instructions

Add vinegar, sweetener, and mayonnaise to a bowl and whisk together. Set aside.

In a large bowl, combine broccoli, cheese, red onion, almonds or pecans, and bacon. Mix well.

Mix mayonnaise mixture and broccoli mixture together.

Refrigerate for an hour before serving.
